30 Minute Soup and Salad Meal

  • 4 slices bacon
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (16-ounce) can baked beans
  • 3 cups chicken broth
  • 1 (14-ounce) can diced tomatoes, undrained
  • 2 tablespoons butter
  • 2 tablespoons flour

  • Prep Time: 15 minutes
  • Cook Time: 20 minutes

  • Total Time: 35 minutes
  • Yield: 4 servings

In large pot, cook bacon until crisp. Remove bacon, drain on paper towels, crumble, and set aside. Remove all but 1 tablespoon fat from pot.
Cook onion and garlic in bacon fat until tender, about 5-6 minutes. Add beans, broth, and tomatoes. Bring to a simmer and cook for 10-15 minutes until hot and slightly thickened, stirring occasionally. Stir in reserved bacon.

In a small bowl, mix butter and flour until combined.

Drop by small bits into soup and simmer, stirring, until thickened. Serve immediately with cheese.
