Vintage Vanilla Wafer Cake

This unusual coconut cake is made with crushed vanilla wafers.  I'm not sure where the recipe first appeared in print, but it has been around for quite some time.

Ingredients
  • 2 sticks butter, 8 ounces
  • 2 cups granulated sugar
  • 2 cups chopped pecans
  • 5 eggs
  • 1 can coconut flakes, (3 1/2-oz)
  • 12 ounces vanilla wafer cookies, finely crushed
  • 1/2 cup sweet milk, (whole milk)

  • Prep Time: 0 minutes
  • Cook Time: 60 minutes


  • Total Time: 60 minutes


Preparation

Cream butter and sugar. Add eggs one at a time. Add half of wafers crushed fine. Add coconut, nuts, milk, and balance of wafers. Spoon into a greased and floured tube cake pan.

Bake at 325° for 1 hour.

Leave in pan 10 minutes to cool; turn out onto plate.
